The Mistletoe Mimosa is a flute filled with holiday cheer that will brighten everyone’s day. I created this festive holiday mimosa with sparkling wine, rosemary simple syrup and pomegranate juice.
Refreshingly tart, and subtly sweet with a hint of rosemary, it’s my kind of cocktail and I’ve been enjoying them perhaps a little too much lately.
This Christmas cocktail goes from delicious to extraordinary by adding the rosemary simple syrup. Trust me!
I’ve included the recipe for rosemary simple syrup and it is super easy to make. Just add equal parts sugar and water to a pot, add a few rosemary sprigs, bring to a boil, stirring until slightly thickened. That’s it!
Add a spoonful of pomegranate seeds and a sprig of rosemary to create the mistletoe theme. How beautiful is that?

Mistletoe Mimosas
Ingredients
Rosemary Simple Syrup
- 2-3 sprigs Rosemary
- 1 cup Water
- 1 cup Sugar
Mistletoe Mimosa
- 1 ounce Pomegranate juice
- ½ ounce Rosemary simple syrup
- Sparkling wine or Champagne
- 1 tablespoon Pomegranate seeds
- 1 sprig Rosemary
- ¼ cup Sugar (to rim glass, optional)
Instructions
Rosemary Simple Syrup
- Place sugar, water and rosemary in a small pot. Bring to a boil, stirring until sugar dissolves. Simmer for 2-3 minute. Remove from heat and let syrup cool, about 30 minutes.
Mistletoe Mimosa
- Place sugar in bowl. Moisten rim of champagne flute and dip into sugar.
- Pour rosemary simple syrup and pomengranate juice into a champagne flute. Add pomengranate seeds. Top off with your favorite sparkling wine or champagne. Add 1 sprig of rosemary for garnish.
