You don’t need to be Irish to enjoy St. Patrick’s Day! This holiday is celebrated all over the world – and everyone embraces their inner Irishness. To help bring out the Leprechaun in you, I am sharing a recipe for a green-tinged St. Patty’s Day cocktail! We have dubbed it, “Irish Breakfast.”
The Irish Breakfast is essentially a Mimosa with Midori and pineapple juice instead of orange juice. The combination of the melon and champagne flavors pair well together, just like a pot of gold at the end of a rainbow!
I recommend using a dry champagne, cava or prosecco to cut the sweetness of the Midori. And you do not need an expensive champagne. Save the good stuff for another day.
The best part? You can enjoy this delicious drink all year! After St. Patrick’s Day, just call it a Melon Mimosa. Sláinte!
- 6 oz of chilled champagne, prosecco or cava
- 2 oz of chilled Midori or other melon flavored liqueur
- 4 oz of chilled pineapple juice
- Pour the Midori into a tall glass
- Add chilled champagne
- Top off with pineapple juice
