Let’s Toast To The First Day of Summer

Today is the official kickoff to summer!  Whether you’re hanging poolside or hosting a backyard barbecue, there’s nothing better than enjoying the warm weather with a refreshing summery cocktail in hand. So, on the longest day of the year, lets toast to hot days and the launch of my Summer Cocktail Series!

Red, White and Blue Mojito

The first libation in the summer cocktail series is a refreshing Red, White and Blue Mojito (with a Mom’s Mimosa twist). The Fourth of July is right around the corner and this mojito is one of the most adorable and delicious red, white and blue beverages you could serve at a Fourth of July barbecue.

My mojito has the traditional rum, lime, mint and sugar. But there’s a twist! I replaced the club soda with a scrumptious dry cava. Y’all know I try to find any way I can to integrate champagne or sparkling wine into my day. There’s just something about the pop of the cork and the tingly bubbles that can bring a smile to my face, even on the worst of days!

And look at the the patriotic layers! There are strawberries for the red, classic white rum and cava for the white and blueberries for the blue. Lots of lime and mint give it the traditional mojito taste, with just a touch of sweetness from the fresh fruit.

So what better way to celebrate the first day of summer or the Fourth of July than with a red, white and blue boozy glass? With so much fruity flavor in one drink — these could not be more fun.

Red, White and Blue Mojito Recipe (Serves 2)

Ingredients

  • 12 to 15 fresh mint leaves, plus extra for garnish
  • 4 sugar cubes
  • 3 ounce white rum
  • 1 1/2 ounces of cava (or club soda)
  • 4 ounces fresh lime juice
  • 6 strawberries, sliced
  • 1/2 cup blueberries
  • Crushed ice
  • 2 Lime wedges, plus extra for garnish

Instructions

In the bottom each glasses, add sugar cube, a few mint leaves, strawberries and blueberries.
Muddle with a muddler.
Add a lime wedge to each glass.
Fill with crushed ice three-quarters of the way full.
Top with more strawberries and blueberries.
Pour your rum, lime juice and cava over top.
Mix with a butter knife and serve with an additional sprig of mint and lime wedge.

Now pour yourself a drink, finalize your beach trip or perfect your plans for Disney World, and raise a glass to the next three months!
